The Friday Post: Spring At BHH + Mushroom Burgers

I think we made it through another winter. There are a couple of snowflakes on the weekly weather app, but I feel confident it won’t amount to much. My morning walks with Millie are misty and cool, but the afternoons give way to short sleeve weather.

Pops of bright yellow and pink are showing up all over town. With such a short growing season, the plants need to reach their full potential almost immediately. I’ve seen vines grown a foot per day in the heat of summer. Can you imagine how fast that would look via stop-motion photography?

Is it even a photo without Millie?

More News From This Week

  • Episode #8 of the True Tales From Old Houses podcast released on Monday. In the episode, Devyn and I talked about, of all things, lightbulbs. Initially, when Devyn pitched the idea of this topic, I was hesitant. However, it ended up being one of my favorite shows from this season. Did you listen?
  • Speaking of lightbulbs, I bought six new light fixtures for the laundry room/office and the breakfast nook and forgot to buy the bulbs. The timing is rich. I’ve been immersed in lightbulb info for two weeks, and I still forgot. Thanks to Devyn, at least I’ll know what to buy. There will be a full post on the BHH electrical upgrades next week.
  • How’s that window restoration project going you ask? It’s going like this:
Another Broken Pane

Unfortunately, there is no such thing as perfection in this line of work, and you have to break a few eggs to make an omelet. No matter how many times I repair or restore a window, it always feels a little different, and each window seems to have a personality. This one is cranky.

  • Are you following the other One Room Challenge projects? I’m not allowed to say my favorites until the big reveals, but I have a few. It’s week four, and some people are already almost done. I’m jealous and amazed.

DIY Meal Kit Recipe | Mushroom Burgers

This vegetarian burger cooks up fast, tastes delicious, and most importantly, it stays together in burger form instead of falling apart all over the plate. Can I get an amen?

If you are unfamiliar with the BHH concept of DIY meal kits, please read this post first. The initial recipe post in this series is also helpful and informative. Note: Most of our recipes are vegetarian.

Recipe: Mushroom Burgers

Recipe Notes:

  • This recipe would be easy to double and freeze.
  • If you are not a fan of Thyme, feel free to substitute with a different spice. Next time I make these, I plan to use minced garlic instead.

Storage Containers

We use these Sistema KLIP IT boxes or the larger size (shown today) depending on our needs. We are also big fans of 1.3 cup Snapware* for small portions. They fit nicely in the Sistema Klip-it storage boxes. I also recently added these tiny lidded glass containers (intended for baby food, but they work perfectly for spices or small portions).

*This links to the plastic version, but we prefer glass. Unfortunately, the glass containers, sold in sets of four, seem difficult to find now. This 10-piece set includes the small Snapware containers we use as well as some additional, useful sizes.

Have a great weekend!

Veggie burgers that don’t fall apart are a feat of cooking! I have one recipe that has worked well where you bake them on a sheet pan and then brown in a skillet before serving. I’m looking forward to trying this recipe and see how it goes.

Please let me know what you think. I made the burgers again and used garlic instead of thyme. Everyone liked preferred them that way.
